Friday Postcard 4 • Tomato & Basil

There are meals that require recipes.

Then there are meals that simply require good tomatoes.

Every July, I find myself making the same salad.

Not because it’s impressive.
Because it reminds me that the best things usually aren’t complicated.

  • Sun-warmed tomatoes.

  • Fresh mozzarella.

  • A handful of basil picked just before dinner.

  • A drizzle of olive oil.

  • Flaky sea salt.

  • Fresh cracked pepper.
    A splash of balsamic glaze if I’m feeling fancy.

That’s it.

No measuring.
No timer.

Just ingredients that don’t need much help.

Maybe that’s why I love summer so much.

It asks us to stop adding.

To stop rushing.

To remember that enough is often exactly enough.

The conversations somehow last longer when this salad is on the table.

Nobody is in a hurry.

The windows stay open.

Someone pours another glass of wine.

The fireflies start showing up just as the plates become empty.

Those evenings never feel extraordinary while you’re living them.

They only become extraordinary later.

When you realize they were the moments you wanted to remember all along.
