The Salad That Leaves Everyone With an Empty Bowl

There are some meals that don't need a special occasion.
They simply make an ordinary Tuesday feel a little more special.
For me, it's an Italian chopped salad.
Not the kind that comes from a restaurant with too much dressing.
The kind you make slowly at home.
Crisp romaine.
Peppery arugula.
Salami and provolone cut into little bites.
Sweet tomatoes.
Crunchy cucumbers.
Thin slices of red onion.
Pepperoncini for just a little tang.
A handful of chickpeas.
Fresh herbs if they're growing on the patio.
Everything chopped small enough that every forkful tastes a little different.
The dressing isn't complicated.
Good olive oil.
Red wine vinegar.
A touch of Dijon.
A squeeze of lemon.
A little garlic.
Salt.
Pepper.
Maybe a pinch of oregano.
Nothing fancy.
Just ingredients that work beautifully together.
I think that's what I love most about meals like this.
They don't ask for perfection.
They ask for fresh ingredients and people to share them with.
Serve it with warm bread fresh from the oven.
Maybe grilled chicken if everyone is especially hungry.
Pour a glass of something cold.
Open the windows if the weather allows.
Then let dinner unfold without watching the clock.
Those are usually the evenings I remember most.
The conversations that linger long after the plates have been cleared.
The laughter that somehow gets louder as the sun goes down.
The second helping everyone insists they don't have room for.
Good food has never really been about impressing people.
It's about making them feel welcome.
Comfort doesn't always come from a soup simmering on the stove.
Sometimes it comes from a big wooden bowl passed around the table.
Simple ingredients.
Big flavors.
People you love.
I've found that's usually enough.

Because it reminds me that the best things usually aren’t complicated.
Sun-warmed tomatoes.
Fresh mozzarella.
A handful of basil picked just before dinner.
A drizzle of olive oil.
Flaky sea salt.
Fresh cracked pepper.
A splash of balsamic glaze if I’m feeling fancy.
That’s it.
No measuring.
No timer.
Just ingredients that don’t need much help.
Maybe that’s why I love summer so much.
It asks us to stop adding.
To stop rushing.
To remember that enough is often exactly enough.
The conversations somehow last longer when this salad is on the table.
Nobody is in a hurry.
The windows stay open.
Someone pours another glass of wine.
The fireflies start showing up just as the plates become empty.
Those evenings never feel extraordinary while you’re living them.
They only become extraordinary later.
